Casein biodegradable wrapping is an environmentally-friendly alternative to the petroleum-based packaging options which dominate the market. The team behind it fine-tuned the casein coating, making improvements on some of the design flaws from the past such as it dissolving too quickly in water as well as possessing a higher susceptibility to both high temperatures and humidity (the addition of citrus pectin seemed to address these issues). Laetitia Bonnaillie, co-leader of the study, also presented the team’s findings at the 252nd National Meeting Exposition of the American Chemical Society in 2016; she emphasizes the enormous potential that a product like this could have: “The coatings applications for this product are endless. We [the team] are currently testing applications such as single-serve, edible food wrappers.
